Featured Recipe: GlucoMenu® Vegetable Quiche
Recipe Ingredients:
1/2 cup carrots, grated
2 green onions, diced
1/2 cup red bell pepper, chopped
1 t. minced garlic
2 oz. reduced fat, low sodium cheddar cheese, shredded
2 oz. reduced fat, low sodium Swiss cheese, shredded
1 1/2 cup egg substitute, liquid
1 t. black pepper
1 - 9 inch pie crust, prepared

Recipe Directions:
- Preheat oven to 375 degrees F.
- In a non-stick skillet, saute garlic, carrot, onion,
and peppers until tender. Remove from
heat. Add black pepper, Swiss cheese and 1/2 of cheddar cheese.
- Pour egg substitute into pie crust. Add
vegetable mixture to pie
crust. Make sure vegetable mixture is combined
with egg substitute.
- Bake for 15 minutes at 375 degrees F.
Top with remaining cheddar cheese and bake for an
additional 35-40 minutes.
- Allow quiche to sit for 10 minutes prior to serving.
Cut into 8 slices.

The American Diabetes Association recommends having a thorough eye exam when you are diagnosed with diabetes if you are over the age of 30 and every year
