Featured Recipe: GlucoMenu® Cinnamon Coffee Cake
Recipe Ingredients:
4 T. Brummel & Brown light margarine spread
1/2 cup Splenda sweetener
1/4 cup granulated sugar
1/4 cup egg substitute
1/4 cup fat free sour cream
2 3/4 cups cake flour
2 t. baking powder
8 fl. oz. fat free milk
1 T. cinnamon

Recipe Directions:
- Combine flour and baking powder; set aside. Blend sugar, Splenda and margarine in a mixing bowl. Stir in sour cream. Add egg substitute.
- Alternating, mix in flour mixture and milk.
- Spray bundt pan or 9 inch cake round with non-stick coating and flour. Place 1/3 of batter in pan.
- Sprinkle 1/2 of cinnamon on top of batter. Layer another 1/3 of batter followed by cinnamon and remaining batter.
- Bake for 25-30 minutes at 375 degrees F. Cool cake prior to serving.
- Makes 12 slices.

Tip of the Week:
Many people with diabetes often ask, "What can I drink?" Beverages containing
carbohydrate can increase blood sugar. Milk, juice, and other
beverages (soda pop and fruit drinks) should be worked into your meal plan and counted as carbohydrate choices.
The following drinks have minimal effects on blood sugar:
- water,
- sugar free drink mixes containing little or no calories,
- decaffeinated coffee or tea, or
- diet sugar free soft drinks.
Limit beverages with caffeine as these actually deplete the body of
water. Choose whole fruit more often over fruit juice to increase fiber
in your diet.
